Bring the milk to the boil together with the cinnamon stick and the orange peel.
Meanwhile mix the egg yolks with the sugar and the corn flour (diluted in a little water).
Add the boiling milk to the eggs and flour and stir well. Put the mixture on the hob again stirring constantly until it becomes quite thick.
Pour it on to a tray (at least 3cm deep) and let it cool. Once it is cool, cut it into 3cm by 3cm squares.
Cover each piece in normal flour and then in egg and fry until golden. Pat dry and sprinkle with sugar and cinnamon powder. It can be served accompanied by custard.
